The buttons located in the lower-right corner of the main window allow you to adjust the scan mode, scan size, resolution, quality, file format and if you want to merge the next two scans into one page. You can adjust the default values for all of these settings except the merge mode.

32_mode_auto Scan Mode
Select the color mode.
Available color modes are: Black/White, Grayscale, Color, and Automatic.
37_size_auto Scan Size
Select the paper size.
Available options (vary between scanners) are: Ledger (11" x 18"), Legal (8.5" x 14"), Letter (8.5" x 11"), Max. Size, A3, A4, Custom, and Automatic.
43_res_200 Resolution
Select the scan resolution in dpi (dots per inch).
Available dpi values are: 200 (normal text), 300 (small text), 400 (business card), and 600 (extra small text).
49_qual_standard Quality
Select the quality of the scan. The higher the quality, the larger the resulting file. Available quality options are: Low, Standard, Better, and Best.
53_format_pdf Format
Select the file format to save the scanned images.
Available file formats are: PDF, JPG, TIFF, and Searchable PDF. The Searchable PDF format requires that the bundled OCR software is installed.
58_merge_none Merge
Select the merge mode. Merging lets you scan two images to a single page. Merged images will be treated as one image when editing.
Available options are: Merge: None, Horizontal merge, and Vertical merge.
